Citric acid is a weak organic acid that occurs naturally in citrus fruits such as lemons, oranges, and grapefruits. It has been used for centuries in food preservation, as a flavoring agent, and for health-related purposes. The ancient Greeks and Romans used it as a natural preservative, and it was discovered in the 1780s by a Swedish chemist who isolated it from lemon juice.
